As the summer garden produces a bumper crop of flavorful fruits and vegetables, here are some easy and delicious ways to add seasonal bounty to a family favorite food.
With a teenager in the house, I’m always thinking about weekend food, fright night food… well, actually, the demand for food is quite high with him. Teens and food just go together. And when I think of teens-and-food — naturally, my mind wanders to pizza.
But what I had in mind was something just a little more tantalizing than your standard cheese or pepperoni pizza.
Something easy — and healthier. Something to make at home.
Test drive some of these pizzas… easy, filled with seasonal goodness, and certainly delicious!
1. ZUCCHINI PIZZA RECIPE
“Half moons of salted zucchini are cooked atop a white pizza along with raw garlic, goat cheese and thin slices of fresh lemon. The pizza is then finished with a scattering of chopped chives. A riot of green and yellow, this Zucchini Pizza is light, bright and packed with flavor.”
2. Suncrest Gardens Farm’s Pesto Pizza
Heather Secrist uses kale in her pesto for this tomatoey creation, though you can substitute arugula, spinach or basil if you prefer. “Pesto can be frozen in ice cube trays for use throughout the year,” says Heather, owner of Suncrest Gardens Farm in Cochrane, Wisconsin. “Once frozen, place the cubes in a freezer bag to pull out as you need them.”
3. Zucchini Pizza With Fresh Mozzarella and Basil Pesto
“A quick and easy dinner idea. Spread pesto on pizza dough, add seasoned zucchini rounds, add cheese. Get the recipe by Elizabeth Winslow for Camilla Styles.”
4. 15 Minute Easy Margherita Flatbread Pizza
“The whole process from start to finish doesn’t take more than 15 minutes, and tell me that having a lunch like this ready in 15 minutes is not awesome!”
5. PROSCIUTTO ARUGULA BURRATA PIZZA
Michelle says of her pizza recipe, “So this pizza! How could you go wrong prosciutto, arugula, burrata anything? You can’t. It’s one of those combinations of ingredients that go together perfectly no matter what, and especially when pizza is involved.”
6. POLENTA AND MUSHROOM PIZZA with Taleggio and Tarragon
7. Grilled Chicken Margherita Pizza
“A personal size pizza with smokey grilled chicken, roasted cherry tomatoes, melting cheese, and fresh basil. The ultimate pizza night for two! “
8. Spinach and Artichoke Deep Dish Pizza
“Bake homemade pizza in a cast-iron skillet for irresistibly crispy crust.”
9. Roasted Cauliflower Pizza
“This ultimate vegetarian pie shines a spotlight on cauliflower, contrasting its soft, nutty flavor with the crispness of breadcrumbs and our thin crust.”
10. Cracker-Style Thin Crust Pizza!
“It’s crackly, flaky, crisp but with a little bit of give, and it takes up so much less belly real estate than doughy chewy regular crust that you can eat, like, seven more slices. Which is clearly the most important part.”
