Healthy 15 Minute Dinners
The key to keeping these 15-minute meals fast and easy is healthy packaged food (like jarred sauces and precooked grains), plus simple cooking techniques that help to shave off time.
Monday is the easiest dinner ever using jarred pesto sauce. Ready in 15 minutes with a mere 5 ingredients, this Pesto Ravioli with Tomatoes and Spinach is a perfect Monday dinner.
For Tuesday, we’re keeping it super simple with a 5-minute Taco Mac and Cheese. Feel free to swap the ground beef for your choice. Cooked chicken or ground turkey will be delicious.
On Wednesday, Thanksgiving Eve, we’re making an easy Prawn Laksa Curry Bowl. For some reason, it’s been my tradition to serve anything Asian on the day before Thanksgiving. Takeout is great because I’d been cooking all day. This year, I’m planning for Laksa — which is just as simple as takeout.
Friday’s dinner is a fun BBQ Turkey Taco using leftover turkey meat. But swap it for chicken if you don’t have turkey.

Wednesday: Prawn laksa curry bowl recipe
I don't know why but I crave Asian food on Thanksgiving Eve. Maybe because I've been cooking all day. In pre-COVID days, takeout was a great option. This year, I'm making this super easy curry bowl that makes for a delightful dinner. Swap ingredients for those you have on hand! If you're not into shellfish, swap for any cooked meat that strikes your fancy!
Thursday: Thanksgiving
It's feast day -- Thanksgiving is a day I wait for all year long. Though this year we'll be celebrating with smaller scale Thanksgiving recipes, it will still be a deliciously wonderful day! Check the links above for more Thanksgiving recipe ideas!
Friday: BBQ Turkey Tacos with Red Cabbage Slaw
I'm calling this recipe BBQ Turkey Tacos because I'm planning to use leftover turkey from yesterday. But it's just as delicious made with chicken, as you will see in the recipe. It's "zippy, creamy slaw is so good you might find yourself making it for other sandwiches."
Pumpkin Scones with Cinnamon Icing
These easy pumpkin scones are the first thing I bake when fall leaves begin to color. Filled with warm autumn spices, moist and tender, and drizzled with cinnamon icing. They're coffee shop perfect, especially with a morning latte. Or incredibly wonderful with afternoon tea.
