Healthy 30 Minute Dinners in May Menu
Monday’s dinner is like taking a quick trip to Asia in 20 minutes or less. With convenient ingredients and quick preparation. I love this meal! If you have leftovers, it is equally delicious cold and makes delicious lunches!
Tuesday’s dinner is a plant-based, quick Mexican favorite filled with healthy staples. Choose your favorite tortilla (whether that be flour, corn, or even egg wraps to keep it lower carb). This is a diabetic-friendly meal that is savory and a little sweet too!
Wednesday’s dinner is a quick stir-fry packed with May-perfect vegetables that are easy to swap with your favorites… although snow peas are lovely! Serve over your favorite grain.
Thursday’s dinner is an easy sheet pan seafood meal to make dinner even easier. With simple one-pan cleanup, you will hopefully have time for after-dinner fun– like maybe a walk around the neighborhood?!
Friday’s dinner is a quick and easy recipe using rotisserie chicken. It’s Friday-perfect, fun, and easy. Consider adding a bowl of guacamole and all the condiments you love.
Treat: With Memorial Day just around the corner, this treat is perfect for the beginning of a long weekend… and the unofficial start to summer.
