Weeknight Dinner Meal Plan: This week we’re making healthy 5 Country Dinners. What exactly does that mean? We’re traveling the globe with these internationally inspired dinners from India, Mexico, Greece, Asia, and Italy. Grab your passport!
Let me emphasize the word, “inspired.” These recipes may or may not be “authentic” to the country I’ve identified. We’ll just say it’s loosely “inspired.”
I don’t know what it is, but I’ve been almost binge-watching YouTube videos of food-based travel. I’m loving Luke Martin’s Chopstick Travel, and others like it. If you have a favorite — send me a link!
Thus, when I began writing the menu plan, all I could think of was changing up the weekly menu to reflect far-flung places across the globe!
Here’s what I’m making this week.
Healthy 5 Country Dinners
We begin our travels in India with this Indian-inspired Instant Pot Chickpea Curry. I’m serving it over basmati rice and will add a green salad.
On Tuesday, we’re heading (where else on a Tuesday!) to Mexico with a super simple but delicious Chicken Enchilada Skillet Casserole. Tons of flavor and always a family favorite.
Some of my favorite cuisines come from the Mediterranean region. Wednesday’s Herb Roasted Chicken with Potatoes and Olives and Feta bring Greece to mind with all of its amazing flavors. It’s a simple, one-pot dinner.
Next, we’ll head to Asia for Soy Ginger Salmon. I’m serving it over brown basmati rice and adding either snow peas or sugar snap peas, depending on what looks freshest at the market.
Finally, Italy claims Friday’s spot with this incredibly yummy Baked Ziti with Turkey Sausage. And with the Super Bowl on Sunday, leftovers will make fantastic weekend eats!
The treat simply has to be chocolate. Super Bowl and chocolate belong together.

Monday: Vegetarian Instant Pot Chickpea Curry
A 20-minute Indian inspired Chickpea Curry that's simple, delicious, and filling. I'm serving over basmati rice with a side green salad.
Tuesday: Chicken Enchilada Skillet Casserole
