Ingredients

  • 1 cup flour
  • 1 cup whole wheat flour
  • 1 cup old fashioned oats
  • ½ cup crushed bran cereal
  • ½ cup brown sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 apple peeled and diced small
  • 2 eggs
  • ¾ cup milk
  • ¼ cup canola oil

Instructions

  • Preheat oven to 400-degrees. Prepare a 12-cup muffin tin with non-stick baking spray.
  • Combine flours, oats, crushed cereal, brown sugar, baking powder, baking soda, salt, and cinnamon in a large mixing bowl. Fold in apples.
  • In a separate bowl, combine eggs, milk, and canola oil. Fold into the dry ingredients.
  • Portion muffins equally, using a scoop, into the muffin tins.
  • Sprinkle the top with a few oat flakes and a thin slice of apple if desired.
  • Bake for 20 minutes, or until golden and when a toothpick inserted in the middle comes out clean.
