Summer cooking is often associated with the grill. And while we will make use of the grill this week, more traditional “one-pan dinners” are also a great option for warm-weather meals as well. Whether made on a sheet pan, in one skillet, or in one pot, these healthy summer dinners are light, bright, and delicious!

Healthy July One Pot Dinners Menu
Monday’s dinner is already making me hungry with an entree salad featuring grilled salmon and an irresistible Cilantro Lime dressing. Perfect for outdoor dining, entertaining, or dining in.
Tuesday’s dinner is an easy-to-make Mexican-inspired skillet dish that’s a favorite at our house. It’s a simple and quick fix with pantry ingredients and simple prep. Don’t forget to add greens and tomatoes!
Wednesday’s dinner is another grill favorite, easily made on an outdoor or indoor grill. I love my griddle pan for indoor grilling this year. Serve with charred corn (cooked in the same pot) for a quintessential summer meal.
Thursday’s dinner is a simple skillet seafood dinner ready in under 30 minutes. Add your favorite greens or cooked vegetables to round out the meal.
Friday’s dinner is a multi-cooker, simple, light, and delicious dinner featuring fresh summer zucchini and sweet corn. If you want to add protein, cooked chicken, ground meat (including sausage), or seafood would be a delicious addition!
Treat: It’s blueberry season, and this week’s treat is an at least once every summer “requirement.” As is the vanilla ice cream melting over this warm, delicious dessert.
