Weeknight Dinner Plan: These Summer 20 Minute Dinners are healthy, easy to make, and deliciously seasonal. From salads to noodles, burgers, and shortcakes, it’s going to be an easy dinner week!
It’s the middle of July and summer is well underway. I hope you’re finding your summer stride and enjoying the season to the fullest.
One of my favorite summer activities is browsing the farmers market, visiting local farms, picking berries, and watching over my own garden.
It’s what I love about summer food. It tends to be simple, whole, and easy to cook.
I hope you’ll find that in this week’s easy summer menu.
Here’s what we’re planning this week.
Healthy Summer 20 Minute Dinners
We’re beginning the week with a meatless dish for Monday, a simple and healthy pasta with fresh veggies.
On Tuesday, we’re cooking from the Instant Pot to keep the kitchen cool. This lettuce cup dinner is super flavorful and delicious!
Wednesday’s dinner is an all-around favorite and does double duty if you have leftovers. It’s perfectly wonderful served warm or cold for lunches later in the week.
For Thursday, we’re making a recipe I make often. It’s super simple, summery (although I love it all year), and an easy dinner to dine outdoors with. Add your favorite condiments, salad, and raw veggies.
If you love a great cobb salad, Friday’s dinner is for you. Every summer needs a great cobb salad, I think!
And finally, I’ve not had enough strawberries this season. I’m still craving a delicious strawberry shortcake on the patio with, yes, a scoop of vanilla ice cream. Sometime this week, it will happen!
