January Mediterranean Diet Dinners: We’re keeping our healthy January goals with these super delicious weeknight dinners, inspired by the Mediterranean Diet.
Last week, we based our weekly menu on MIND Diet dinners. It was a delicious and healthy week.
And as you know, the MIND Diet is a hybrid of the DASH diet and the Mediterranean diet.
This week, we’re shifting gears with Mediterranean Diet focused dinners that will be equally delicious and healthy. And I think it is perfectly appropriate for the cold month of January.
What to Eat on the Mediterranean Diet?
The Mediterranean diet is considered to be one of the healthiest and best in the world. Consider it as a guideline for healthy eating. The Mayo Clinic defines the Mediterranean diet:
- Daily consumption of vegetables, fruits, whole grains, and healthy fats (like olive oil)
- Weekly consumption of fish, poultry, legumes (beans & lentils), and eggs
- Moderate portions of dairy products
- Limited intake of red meat
When eating Mediterranean diet focused meals, concentrate on these ingredients:
- Olive oil
- Beans, lentils, bulgur wheat, quinoa, and rice
- Plant-based foods
- Vegetables
- Lean meats and seafood
January Mediterranean Diet Dinners
With a focus on ingredients rather than the delicious and inspired region of the Mediterranean, here is what’s on the menu next week:
I’m excited to incorporate various grains into this week’s dinners. Monday features one of my favorites, lentils. This easy soup is packed with flavor and healthy ingredients. I’m adding a whole grain loaf with dinner. Either a bread machine classic or 100% Whole Wheat Bread along with a green salad.
For Tuesday, we’re making burgers, the Greek way. With a delicious sauce and veggies that just might make you a tiny bit excited for spring.
On Wednesday, we’re adding farro to the grains list with an easy, one-skillet chicken dinner.
Thursday’s seafood dinner is a quick and easy sheet pan fish, I used Black Cod in this recipe but any white fish works well. Add your favorite vegetables and a side salad.
For Friday, we’re curling up by the fire with a good movie… and bowl food — Mediterranean style.
You might want to save the treat for Friday, as it’s rather perfect for the weekend.

Monday: Curry Lentil Soup
Curry Lentil Soup is naturally vegan, packed with curry flavors, turmeric, and ginger, and is utterly delicious. Simple to make in 30 minutes or less, it's a must cook for soup season!
Tuesday: Greek-Inspired Burgers with Herb-Feta Sauce
"These healthy burgers get a Mediterranean twist with a yogurt sauce seasoned with oregano, lemon and feta cheese. If you can't find ground lamb, ask the butcher to grind some for you."
Wednesday: One Skillet Greek Sun-Dried Tomato Chicken and Farro.

Seasonal white fish is seasoned with lemon and garlic before baked on a bed of sliced potatoes, snow peas, spinach and zucchini for a delicious, light and easy sheet pan dinner that is perfect for spring!
Friday: Mediterranean Chicken Quinoa Bowl Recipe
