January One Pot Dinners are on the menu this week. Most of these recipes are Mediterranean Diet friendly. All are simple, delicious, and perfect for healthy weeknight meals. Especially in the heart of winter.

Last week’s menu focused entirely on the Mediterranean Diet. This week’s dinners are mostly that as well with a few exceptions. It’s one of the things I love best about this way of eating. It’s flexible and forgiving, concentrating instead on developing a lifestyle around the food we eat, enjoy, and serve.
To recap, Mediterranean Diet foods concentrate on daily consumption of vegetables, fruits, whole grains, and healthy fats (like olive oil). With a weekly consumption of lean protein, including eggs, and moderate portions of dairy.
January One Pot Dinners Menu
This week’s dinner ideas are healthy, simple, and delicious. Most are Mediterranean Diet friendly.
Here’s what we have on the menu:
Monday’s dinner is a slow cooker minestrone type soup, perfect on a cold winter’s day. With nourishing vegetables, you may want to serve this dish with whole grain bread and even a winter salad.
For Tuesday, we’re serving a Mexican-inspired quinoa dish with lean chicken and all the enchilada toppings you love. I’m serving chopped tomatoes and avocados on top of this delicious bowl food with a dollop of Greek yogurt and maybe a pinch of shredded cheese too.
Wednesday’s dinner is a one pot skillet Mediterranean chicken dish with delicious Greek-inspired flavors.
A one-pan roasted seafood dish is on tap for Thursday. Choose your favorite white fish that will be roasted (in the same pan) with ample amounts of vegetables. A salad would be very nice along side this dish.
For Friday, we’re making a one-pot pasta dish, which is an easy 31Daily favorite family-style dinner. Choose your favorite ground meat and add your favorite veggies. Simple and Friday-perfect.
