Mediterranean Diet
If you’re new to the Mediterranean Diet, you may wonder how restrictive it is. It’s summer, after all, and restrictive “anything” doesn’t do well in this season.
Here’s great news: The Mediterranean Diet isn’t packed with a list of eat this, not that, or do this, not that.
This “lifestyle” way of eating focuses on wholesome ingredients, fragrant flavors, and celebration. It’s about enjoying life, food, and the company of others. It’s about making healthier choices and enjoying an active lifestyle.
June Mediterranean Diet Dinners Menu
Monday’s dinner is a classic Mediterranean Diet combination of ingredients and flavors. And a beautiful way to welcome the season with summer produce and healthy grains.
Tuesday’s dinner is a seafood taco that you don’t have to cook. It’s simple, ready in 10 minutes or less, and packed with fresh ingredients and crunchy textures.
Wednesday’s dinner is a delicious take on bruschetta with a baked chicken breast dish that’s always popular at my house. Be sure to add a large green salad to round out the meal. For sides, consider adding your favorite cooked grain (like rice or quinoa) and steamed vegetables.
Thursday’s dinner is a quick and easy baked cod that’s packed with olive oil, lemon, and garlic. Serve with a salad like Mediterranean Chickpea Salad, and roasted or steamed vegetables.
Friday’s dinner takes us to the grill (indoors or out) with fun Mediterranean Diet ingredients and flavors.
Treat: With the weather heating up, and blueberries coming into the market, this week’s treat is all about keeping you cool and healthy!

Monday: Mediterranean Quinoa Salad
"This fresh Mediterranean quinoa salad recipe features summer squash, tomatoes, eggplant, basil, and mint! It’s light, healthy, and delicious." The recipe yields 2 dinner servings. I'm doubling the recipe and will be grilled chicken for my husband. Prep the quinoa ahead of time for a quick and easy meal.
Tuesday: 10 Minute No Cook Salmon Fish Tacos
When summer sun sizzles, these No-Cook Salmon Tacos will be your answer to quick, 10-minute healthy, and delicious meals. Not only does the oven stay off, but so does the stovetop. Simple, rustic, packed with flavor fish tacos!
Wednesday: Easy Bruschetta Chicken Breast Bake
The flavors of summer in this easy, bruschetta chicken breast recipe. Serve with fresh seasonal greens.
Baked Cod with Lemon and Garlic
"Prepared Mediterranean style with a few spices and a mixture of lemon juice, olive oil, and lots of garlic. Bakes in 15 mins!" Serve with Mediterranean Chickpea Salad for a summer healthy meal!
Friday: Greek Island Chicken Kebabs
"This is excellent served with pita bread, garlicky tzatziki, and a Greek salad. Lamb can be substituted for the chicken, and many variations on vegetables can be used." This calls for a chicken marinade that I will be making the evening before. Dinner, then, is ready in minutes.
