Weekly Dinner Meal Plan: Feb 18 – 22, 2019
It’s been a week of snow and winter in my neck of the woods. We’re just beginning to dig out. And while I’m an incredibly HUGE fan of snow… and winter, I’m looking forward to spring.
Are you? Spring that is.
This week’s dinners a bit lighter, yet still wintery, but looking toward spring. And as always, healthy and easy.
Which makes them perfect for weeknight dinners. You will notice a couple of bowl dinners, a Meatless Monday and a “Taco” Tuesday, which simply means Mexican food, a pasta dish… and another Mexican favorite for Friday!
It’s what’s for dinner this week.

Monday: Sesame Tempeh Bowls
“These Sesame Tempeh Bowls are a great vegan alternative to sesame chicken and only take about 20 minutes to make. An easy fast vegan meal prep!” If you’re not familiar with tempeh, “it’s a compressed cake of fermented soy beans. It sounds a little weird, but I promise it’s awesome. It has a fairly neutral taste (a slight bitterness, if anything) and it absorbs the flavor of whatever sauce you pour over top. It’s a fantastic source of plant-based protein, fiber, and other nutrients, and has a much more firm texture than tofu. Because it is more firm, I find it works better than tofu for stir fry.” It’s easy to find in most markets.

Wednesday: 15 Minute Meal Prep: Egg Roll in a Bowl
It’s one more bowl food this week — because winter to me requires copious amounts of bowl food. Cozy and perfect. This Egg Roll in a Bowl is incredibly quick. And here’s why. “The fact that you can buy a bag of pre-shredded coleslaw (sans sauce) and toss it in the pan with your pork, garlic, ginger, and soy sauce and pretty much have this meal, like, completely done? it’s a game changer.”

Thursday: Garlic Shrimp Pasta
“This healthy Garlic Shrimp Pasta has my ideal pasta/veg/protein ratio. You’ll find oodles of color twisted in with the noodles. The pasta is clearly present, but you won’t feel like you’re eating giant pile of mostly spaghetti with a few casual veggies and a scarce shrimp or two dotted sparsely throughout, as if they’re being rationed.” To keep this dinner super quick and easy, use a frozen Asian Stir Fry Veggie package and frozen shrimp. Quick, easy, and healthy. Delish!

Friday: Sheet Pan Fajitas
Fridays deserve easy — healthy — and versatile. This wins in all points. Plus… it’s party food. Fridays should be fun! Serve with warm tortillas and, of course, guacamole or hummus!
