As we shift into a new season, I find myself craving deeper flavors and heartier food. From slow cookers to braising and all kinds of baked treats too. Here are some recipe ideas if you're finding yourself fully into fall too!

October One Pot Dinners: What's on the Menu

This week's October One Pot Dinners are delicious and perfect for the fall season. We have a soup, pasta, skillet dinner, slow cooker dinner and a healthier Indian-inspired dish planned for this week.

Monday's dinner is a vegetarian Italian-inspired broth-based soup packed with healthy vegetables. It's absolutely perfect for October. I'm serving with whole grain bread and greens.

On Tuesday, we're cooking a family and a reader favorite recipe that is a super simple one-pot pasta dish you can make with ground beef, chicken, or turkey. Also packed with healthy vegetables.

Wednesday's dinner is one I've been craving for several weeks. I absolutely love Indian-inspired food and this healthier version of a classic favorite will be utterly delicious.

Our seafood dinner this week is a simple skillet dish that's ready in minutes. Serve with your favorite grain and greens.

I can't imagine October without chili. Friday's dinner is an easy slow cooker chili recipe that basically cooks itself.
