October One Pot Dinners: What’s on the Menu
As we round up a favorite fall month and look forward to the beginning of the holiday season with Halloween just days away, these dinners are not only delicious, but will make cleanup easy. Leaving you time to enjoy the week!
Here’s what’s on the menu:
For me, it isn’t Halloween without chili. It isn’t even October without chili. We making a one pot vegetable chili recipe I’m loving this year. Serve with cornbread if you want (I can’t skip that) and salad greens on the side.
Tuesday’s dinner is a scrumptious chicken sheet pan dinner filled with autumn flavors and vegetables like sweet potatoes and Brussel sprouts. Ready in about 30 minutes!
Mid-week takeout always seems like a good idea but if you want to watch the budget and keep it healthier, making it at home is a great choice. This week we’re making it in a pressure cooker for a quick and easy, not to mention delicious dinner! Again, serve with greens.
For Thursday, we’re planning a one-pot pasta with tuna to keep it really simple and even budget friendly.
Fall Friday’s are the best. We love pizza on Fridays as we head off to a game… somewhere. Making it at home couldn’t be easier than with this recipe using store-bought pizza dough, or homemade pizza dough you’ve prepped ahead. Pizza is ready in minutes.
The treat this week is all about Halloween and goofy treats. These cookies make me smile and are so much fun to make.
