Roasting cauliflower brings such a beautiful, almost nutty flavor to the vegetable. Plus, it’s incredibly easy to make, yet delivers so much for the effort.
Cauliflower Nutrition
Cauliflower is an excellent nutrient source of vitamin C, vitamin K, folate, pantothenic acid, and vitamin B6 and a good source of fiber, omega-3 fatty acids, manganese, phosphorus, and biotin.

Roasted Cauliflower with Turmeric and Cumin
Specific measurements are in the recipe card at the bottom of this post, but here is an ingredient summary of what you will need:
- Cauliflower florets (2 heads)
- Cooking oil
- Ground turmeric
- Cumin
- Red pepper flakes
- salt and freshly cracked pepper
- chopped fresh mint for garnish
How to Make Roasted Cauliflower
Preheat the oven to 425°.
Step 1: Make a Spiced Oil
In a small bowl, combine the oil, cumin, turmeric, crushed red pepper, and 1/2 teaspoon of salt.
Step 2: Coat the Cauliflower
Spread the florets onto a large rimmed baking sheet, drizzle the cauliflower with the oil mixture and toss well to coat. Season with additional salt and pepper as needed. Spread the cauliflower in an even layer.
Step 3: Bake and Garnish
Bake for about 25 to 30 minutes, or until nicely browned and fork-tender.
Garnish with fresh mint and serve.
