Simple November Dinners: As the calendar shifts into November, these simple fall-inspired, healthy meals will help get dinner on the table quickly. And keep everyone happy.
November is a month of cooking. Often early holiday preparations begin for Christmas as well as planning for the Thanksgiving feast.
But every night the people we live with need dinner too.
These simple November dinners are inspired by quick-cook, few ingredient, healthy recipes, that also happen to be delicious.
Here’s what we’re cooking this week.
Simple November Dinners
Monday’s dinner is a fall standby at my house. I love to cook a whole chicken in the Instant Pot. It’s simple, tender and juicy every time, and super easy.
However, if you don’t have an Instant Pot or want to oven roast, or even buy a store-bought rotisserie chicken, by all means, do it! I’m adding a green salad and steamed broccoli.
Be sure to reserve leftover chicken for the rest of the week.
On Tuesday we’re using part of that cooked chicken for a quick and easy tamale casserole. I love tamales and this recipe is so simple, perfect for a weeknight dinner. Add greens!
For Wednesday we’re making a super easy vegetable pasta that makes its own sauce.
Thursday’s dinner is a 3-ingredient, 15-minute Thai-inspired salmon dinner that does require a meal prep step the evening before — so check that out. Serve over your favorite grain and steamed or stir-fry vegetables.
Friday’s dinner is a 5-ingredient, 15-minute chicken chili perfect for a November Friday. Add cornbread or corn muffins and a salad.
