Valentine’s Day Strawberry Heart Cookies

Valentine’s Day is soon approaching, and these Strawberry Heart Cookies are an easy gift for your sweetheart. It’s a simple sugar cookie dough, sweetened with strawberry preserves and cut into heart shapes. And so yummy, and pink and pretty.

There’s something special about heart-shaped cookies. Especially on Valentine’s Day. But any time of the year when you want to share a little baking love. The cookies are easy to make with a simple heart-shaped cookie cutter.

Ingredient measurements are in the recipe card at the bottom of this post, but here is a quick list of what you will need:

The cookie dough is my favorite sugar cookie cutout recipe with added strawberry jam or preserves and a touch of lemon juice to brighten the strawberry flavor. The color comes from the jam. If you want to deepen the pink color, add a couple of drops of red food coloring.

The white icing glaze on the cookies is simply confections’ sugar, butter, 

  • All-purpose flour: I’ve not yet tested these using alternative gluten-free flour but it should work fine.
  • Butter: salted or unsalted and softened to room temperature
  • Granulated sugar
  • Large egg
  • Strawberry preserves
  • Flavoring: Vanilla extract and lemon juice for brightness
  • Leavening: Baking powder plus salt to enhance sweetness and flavor

How to Make Heart Cookies

The cookies are made like your favorite sugar cookie. Begin by preheating the oven to 350° and lining a baking sheet with parchment.

  1. Wet Ingredients: Cream the butter and sugar in a stand mixer until light and fluffy. Add the egg, preserves, lemon juice, and vanilla; mix to combine.
  2. Dry Ingredients: Combine the flour, baking powder, and salt in a separate bowl. Add to the butter mixture and combine. Divide the dough into two portions, shape it into discs, wrap it in plastic, and refrigerate for about an hour.
  3. To bake the cookies, remove the dough disk from the refrigerator and let it sit at room temperature for about 10 minutes. Once soft enough to handle, roll out the dough and cut it into shapes. Bake cookies for 10-12 minutes or until light brown around the edges.

Ingredients 

  • 1 cup butter (2 sticks) softened
  • 1 cup granulated sugar
  • 1 large egg
  • 3 tablespoons strawberry jam
  • 1 teaspoon vanilla
  • 1 teaspoon lemon juice
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Optional:

  • 2-3 drops of red food coloring will deepen the pink or red strawberry color

Instructions

Notes

Icebox Variation: If cutouts aren’t your thing — this dough works great as an icebox cookie. Instead of forming the dough into a disk, form into a log, wrap in plastic and refrigerate until ready to bake. Then simply slice and bake. Or… roll the log in sprinkles and then slice and bake.
