Weekly Dinner Meal Plan: June 25 – 29
A 5 night, Weekly Dinner Meal Plan that’s easy, seasonal, and healthy. Plus, a weekly treat you won’t want to miss.
It’s the first full week of summer. Kind of unbelievable. But as always, we’re ready to take on the new season, looking forward to fresh seasonal and healthy foods.
As the summer sun makes itself known, our meals begin to lighten and ease with the season. I’m looking forward to all of the fresh, seasonal veggies and berries flooding the markets and growing in my garden.
And yes, I’m looking forward to easy cooking, outdoor dining, s’mores and star gazing. And reconnecting with family and friends.
It’s the beauty of summer.

Because it’s Monday, and summer, and the garden is brimming with spinach, I’m beginning the week with one of my favorite summer salads. Easy, using rotisserie chicken, and healthy and fresh with spinach, and cucumber and sweet corn. Oh my goodness, I love this salad. To make it extra easy. I’m buying two rotisserie chickens. One for serving on Sunday, one to shred ahead for this recipe. If I end of up with extra shredded chicken, it will go into the freezer for another easy weeknight meal. Like our favorite easiest ever enchiladas.

Tuesday: Elote Rigatoni
“Elotes—Mexican street corn—hop off the cob and onto a big bowl of rigatoni. The stuff of summery weeknight dreams. Save any leftovers for tomorrow’s pasta salad.”

Wednesday: Pesto Ravioli with Chicken
Wednesdays are super busy in our household. This is an easy, one skillet meal that’s ready in a flash. With few ingredients, it’s budget friendly as well as fast. And once again… if there are any leftovers, they feed hungry teenagers the next day.

Thursday: Easy Skillet Fajitas
This recipe can be made with chicken or steak. And is made with a simple seasoning mix, and thinly cut peppers and onions. Serve with warm tortillas, homemade guacamole, and a green salad. I’m making it with beef as we’ve had chicken two nights this week.

Friday: 15 Minute Foil Packet Fish Dinners
I’m ready for grilling season… and tonight is no exception. We have people coming and going this evening, so we’re serving these incredibly simple and completely customizable foil packet dinners. With a mix and match list of seafood and veggie ideas, as well as topping suggestions, everyone will be happy. I love Fridays like this!
