Summer is in full swing as we head in August.
So, we’re keeping it easy, summery, and healthy.
In fact this week, we have a double duty dinner, an amazing vegan burrito bowl, and some grilling. In fact, Friday is my birthday and the guys are in charge. I thought they could handle this one. We’ll see?
I’ve been obsessing over pineapple lately. It’s these sweltering days. So I’m baking with it this week… an easy skillet cake.

Tuesday: Rotisserie Chicken
Tuesday’s dinner couldn’t be easier. We’re serving rotisserie chicken that will serve a double duty. If I find that more are coming for dinner, I’ll get two. The leftover chicken will be served Thursday night for a family favorite. With the chicken, I’m adding Neopolitan Green Beans, a mashed sweet potato, and a side salad.

Wednesday: Easy and Classic Sheet Pan Shrimp Boil
Summer is for easy entertaining… and easy meals. This Classic Sheet Pan Shrimp Boil fits that bill superbly. It feeds a crowd, is succulently delicious with the familiar seasoning of Old Bay and Andouille sausage. A fun meal to serve outdoor or indoor.

Thursday: Easiest Chicken Enchiladas Ever with Leftover Chicken
Tuesday’s rotisserie chicken comes in hand tonight with these Easiest Ever Chicken Enchiladas. It’s quick and easy… and my fingers don’t even get messy! Plus, I can assemble it ahead, Wednesday night, and have it ready to pop in the oven for dinner. Serve with salad and guacamole, of course.

Friday: Grilled White Pizza
How can you go wrong with grilled pizza… on a Friday night? You can’t! “White pizza is basically pizza without the red sauce. Instead I use a combination of olive oil and garlic and then top it with copious amounts of cheese and topped it all off with caramelized mushrooms, basil and red onions for some extra crunch.”

Weekly Treat: Hummingbird Skillet Cake
