Weekly Dinner Meal Plan: July 30 – August 3

A 5 night, Weekly Dinner Meal Plan that’s easy, seasonal, and healthy. Plus, a weekly treat you won’t want to miss.

Summer is in full swing as we head in August.

So, we’re keeping it easy, summery, and healthy.

In fact this week, we have a double duty dinner, an amazing vegan burrito bowl, and some grilling. In fact, Friday is my birthday and the guys are in charge. I thought they could handle this one. We’ll see?

I’ve been obsessing over pineapple lately. It’s these sweltering days. So I’m baking with it this week… an easy skillet cake.

Stay cool as we head into August!

Be sure to print your dinner planner at the bottom of this post.

Have a great summer week!

“We love mushrooms, but even if you don’t think you do, give this a try because the preparation is so so delicious! Smoky, charred portobello slices are topped onto bowls of sizzling fajita peppers, beans, rice, arugula, (the quickest) guacamole, and fresh pineapple salsa. It’s summer grilling at its finest.”

Tuesday: Rotisserie Chicken

Weekly Dinner Meal Plan // Week 31: Vegan and Double Duty Dinners | 31Daily.com

Tuesday’s dinner couldn’t be easier. We’re serving rotisserie chicken that will serve a double duty. If I find that more are coming for dinner, I’ll get two. The leftover chicken will be served Thursday night for a family favorite. With the chicken, I’m adding Neopolitan Green Beans, a mashed sweet potato, and a side salad.

Friday: Grilled White Pizza

Weekly Dinner Meal Plan // Week 31: Vegan and Double Duty Dinners | 31Daily.com

How can you go wrong with grilled pizza… on a Friday night? You can’t! “White pizza is basically pizza without the red sauce. Instead I use a combination of olive oil and garlic and then top it with copious amounts of cheese and topped it all off with caramelized mushrooms, basil and red onions for some extra crunch.”

Weekly Treat: Hummingbird Skillet Cake

Weekly Dinner Meal Plan // Week 31: Vegan and Double Duty Dinners | 31Daily.com

“Hummingbird cake is a classic Southern dessert. It has a similar look and feel to carrot cake, down to the light and tangy cream cheese frosting, but pineapple and banana take the place of the carrots for a tropical twist. It’s almost always served as a stately layer cake, but a cast iron skillet dresses it down into a more casual affair, one that’s easy to transport and perfect for potlucks and picnics alike.”
