Healthy 15 Minute Spring Dinners
It’s a week of quick dinner ideas. Which, hopefully, will help you enjoy the longer, warmer days of late spring.
This week we begin with a simple and healthy soup. For me, soup is a constant, all year long. And this is a favorite as it’s packed with healthy garden vegetables. You might want to add slices of crusty sourdough bread to round out dinner.
On Tuesday, it’s a BBQ chicken taco with red cabbage slaw. Bright and beautiful and perfect for Taco Tuesday — and spring.
If you love 3 and 4 ingredient recipes, this simple pasta dish with broccoli and feta is for you. It’s healthy, makes its own sauce… and makes a mid-week dinner really, really easy.
Thursdays, most often, are seafood dinner nights. I’m so excited about the smoked salad we have on the menu. Simple and perfect for the last week of May.
Do you love Fridays? There’s something special about that last day of the week. It makes you want to celebrate… anything. And “takeout” is a good way to do that. This week, we’re making takeout, at home, in 15 minutes.
