Monday’s dinner is a quick and easy salad filled with summer’s best produce like cucumbers, corn, and canned tuna. It’s perfect for a summer Monday and is bright, refreshing, and light!
Tuesday’s dinner is a meal that can be grilled outdoors or indoors in a grill pan. Fresh herbs, olives, and feta cheese give this grilled chicken and vegetable salad its distinct flavor. Perfect for a hot summer day!
Wednesday’s dinner is a 15-minute salad that’s hearty enough for dinner and light enough for summer. Serve with whole grain bread to round out the meal.
Thursday’s dinner is another 15-minute meal with a handful of Mediterranean diet-friendly herbs and spices. I love to serve this simple dinner with pan-seared roasted vegetables, like zucchini and tomatoes.
Friday’s dinner is summer fun with a Greek-inspired turkey burger. It’s great with sweet potato fries and all the Mediterranean condiments you love, like a 5 Minute Greek Tzatziki Sauce or 2 Minute Greek Yogurt Sauce, tomato slices, greens, and red onions.
Treat: Watermelon! I love to make this treat ahead and have it ready and waiting for snacks or a healthy, refreshing summer treat.
