Whether you’re serving a fall or Thanksgiving afternoon tea or want to enjoy a seasonal finger sandwich with close friends, these sweet, easy-to-make, and oh-so-delicious layered tea sandwiches are a favorite this season.

In our popular Autumn Afternoon Tea post, I included a turkey tea sandwich recipe on cranberry brioche bread with herby goat cheese and apple slices. The recipe was a link to a large recipe site that is now closed. Many of our readers have asked me to recreate that finger sandwich.

This is my version of turkey tea sandwiches that combine our favorite autumnal flavors and ingredients for a glorious season.

Ingredients for Turkey Tea Sandwiches

Here is a quick list of the ingredients I used in these sandwiches.

  • Sandwich Bread: Cranberry Swirl Bread or any cranberry bread or even raisin bread you prefer. You can also use whole wheat bread, too.
  • Turkey breast: Deli meat is easiest and works great, but I happened to have just made a turkey breast at home and used it for this fall tea.
  • Apple: Thinly sliced apples add such delicious texture and flavor. Use your favorite apple variety like Granny Smith or Honeycrisp.
  • Herbed goat cheese: You can buy 4-ounce logs of Herb Goat Cheese ready made at the market. If you can’t find the herbed logs, buy plain goat cheese logs and roll in freshly chopped herbs like parsley, basil, dill, or sage.
  • Cheese Slices: Swiss cheese is a nice complement to these flavors.
  • Sandwich Spread: Mayonnaise, prepared horseradish, salt, and pepper

Cranberry Orange Brioche Bread

This is the tricky ingredient for these tea sandwiches. I’m using Thomas Cranberry Swirl Bread. It can be more difficult to find, but I did find it at my local market. As an alternative, you could use Rasin Swirl Bread or whole wheat bread.

Or, if you have the time, there is nothing better than homemade. King Arthur has a great recipe I’ve made in a loaf pan and used for sandwiches.

How to Make Turkey Tea Sandwiches

You will find step-by-step instructions in the recipe card below, but here is a quick overview.

  1. Freeze the bread for a few minutes for cleaner edges, and then cut into round shapes.
  2. Cut the apple in half vertically, slice it as thinly as possible, and remove the seeds.
  3. Slice the goat cheese, Swiss cheese, and fold the deli meat.
  4. Make the spread by whisking the ingredients together.
  5. Assemble the tea sandwiches.

Tea Sandwich Shapes

These turkey tea sandwiches are made using a round 2 1/2-inch biscuit cutter (or cookie cutter). I also used the cutter for the cheese shapes; the goat cheese log is already round. Here are some alternatives for other shapes.

  • Triangular shape: Use a serrated knife in a gentle sawing motion to trim the crusts and then cut diagonally into 4 sandwiches each.
  • Finger sandwich shape: Use a serrated knife to trim the crusts, and then, depending on the width of your bread, cut each lengthwise into 3 or 4 fingers.
  • Squares: You can also make tea sandwiches into squares, as in my salmon salad tea sandwiches. Use a square biscuit or cookie cutter instead of a round shape.

Ingredients

  • 1/2 lb deli turkey breast
  • 1 apple cored and thinly sliced
  • 12 slices Swiss cheese
  • 8 ounces herb goat cheese
  • 24 slices Cranberry Swirl Bread or any cranberry bread or even raisin bread
  • 1/3 cup reduced-fat mayonnaise
  • 1 tablespoon prepared horseradish
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  • Freeze the bread slices for a few minutes until firm. This will give you clean edges on the tea sandwich.
  • If making round tea sandwiches, use a 2 to 2½ inch round biscuit or cookie cutter and cut 24 circles from the bread. If making triangular tea sandwiches, you will trim the crusts after assembling the sandwiches.
  • Using a sharp knife, cut the apple in half vertically. Then, slice the apples as thinly as possible and remove the core and seeds. A mandolin works great on the thinnest setting.
  • Cut 12 slices of herbed goat cheese and cut 12 circles from the cheese slices using a round cutter.

Make the spread

  • Combine the mayonnaise, horseradish, salt, and pepper until well combined. Set aside.

Assemble the sandwiches

  • Spread 1-2 teaspoons of the spread onto each frozen bread slice. Top with Swiss cheese, folded or sliced turkey meat, goat cheese and finally apple slices. Top with another bread slice. If making triangular sandwiches, use a serrated knife in a gentle sawing motion, trim the crusts and then cut diagnolly into 4 sandwiches each.
  • Serve immediately or cover with a damp paper towel and place in an airtight container and refrigerate until ready to serve.
