This week’s weeknight dinner recipes are going to make for easy meals and satisfied eaters.

Here’s what we’re cooking for dinner.
August 15 Minute Dinners
We’re beginning the week with a super simple meatless Monday dinner of chickpea curry. It’s light and simple and perfect for the warm days of August. Serve over your favorite grain and a fresh green salad.
On Tuesday we’re going to the Southwest with a Tex-Mex, super easy dinner that I know the guys in my house will love.
Wednesday’s dinner is a 12-minute Thai dish made with ground meat. While the recipe is written for chicken, swap in your favorite meat like (turkey, pork, or beef).
We always seem to serve seafood on Thursday and this week’s 15-minute salmon dish is delicious with a creamy orzo side.
On Friday, it’s a cowboy special, one skillet, 15-minute dinner everyone will love.
And finally, the treat is a summer classic, reinvented without a campfire. If you have access to one, by all means, make the real thing!
