This August 30 Minute or Less Dinners meal plan is perfect for mid-month! And when we say “or less,” three of these easy weeknight dinners are 20 minutes. From vegetarian pad thai to ground beef skillet meals, protein-rich salads, and a Friday perfect 20-minute dinner.

August 30 Minute or Less Dinners Menu
Three dinners this week are 20 minutes or less (yay!), and two are right at 30 minutes. Quick, nourishing meals perfect for late summer!
Monday: This easy vegetarian pai thai meal is a low-carb 30-minute dinner featuring a beautiful array of bright colors with fresh late summer-inspired produce.
Tuesday: A 20-minute chicken skillet dish is on the menu featuring our favorite August veggies or tomatoes and zucchini in a creamy skillet dish with Italian seasoning. Round out the meal with a fresh salad.
Wednesday: is a quick, stovetop, keep-the-oven-off kind of dinner. And it’s delicious! If you’re craving takeout, this Asian inspired ground beef and broccoli recipe is a delicious one! Serve over your favorite grain like steamed rice, quinoa, or farro.
Thursday: With this delightful warm weather, I love mixing wholesome protein with crispy greens. This salmon salad recipe hits all of the notes I love in a weeknight meal; easy, delicious, and flavorful!
Friday: Summer Fridays deserve fun food — especially as some of us are either looking toward a back-to-school season or are already there! These chicken avocado tacos are one of my favorite 20-minute meals. And please, don’t skip the cilantro sauce!
Treat: Because most weeks deserve a treat to keep everything happy, this week we’re making muffins. But not just any muffins. These chocolate zucchini muffins are decadent, easy to make, and chocolaty! Plus, they have veggies, so I’m good with that.
