It’s summer… It’s warm… and it’s August! Keeping dinners easy and perfect for summer with Healthy August Skillet Dinners. From skillet Mediterranean recipes to herbed seafood, Mexican, and a Friday dinner for the young and young at heart.

Depending on your outlook, we’ll either endure August and long for the cooler weather of fall, or we’ll embrace it and absorb every last drop.
Which camp do you fall into? For me, it’s a little bit of both. I’m a wimp when the weather turns a bit humid, but I love this beautiful month and all the delights it brings.
If I’m being honest, one of the downsides of growing up is forfeiting the annual school shopping spree with my mom. Always in August… and always so, so hot!
And trying on coats in August? Torture, but always, always worth it! My mom, to this day, has such great style!

Healthy August Skillet Dinners Menu
Monday’s dinner is a Mediterranean breakfast-for-dinner dish packed with good-for-you vegetables and super easy. Add a green salad and warmed pitas to round out the meal.
Tuesday’s dinner is a quick and easy way to serve tacos. It’s a favorite at our house because everyone can choose their preferred condiments. Serve it skillet style!
Wednesday’s dinner takes us back to the Mediterranean with a Greek chicken classic. I love serving it over Middle Eastern couscous, but it works over your favorite grain or pasta too. Add a large summer salad.
Thursday’s dinner is a simple herbed white fish over wilted greens. I love simple dinners like this!
Friday’s dinner is perfect for the young and young at heart. It’s a healthy take on a favorite perfect-for-Friday skillet dinner.
The Treat this week highlights an August perfect stone fruit. It is made in a skillet… and is super easy!
