What are Quick and Easy Dinners?
Ok– that term can be confusing and mean many different things. Here’s how I’m looking at quick and easy dinners this week:
- Dinners that are ready in 15 to 20 minutes (give or take a few).
- Some with as few as 5 ingredients!
- Healthy, nourishing, and delicious too.
- Stress-free dinners without pre-prepping meals.
As the end of summer is within sight, we’re checking things off the summer bucket list, and perhaps dreading or looking forward to more structured routines in the month to come. So, we’re making dinners a little easier as we juggle summer and all the wonderful adventures we’re still planning for the season.
Some of these weeknight dinner recipes will use only 5 ingredients (not counting staples like oil, water, salt, and pepper). Others will be ready in 15 minutes, or even less!
Let’s take a look at this week’s menu!
August Quick and Easy Dinners Menu
Monday’s dinner is a vegetarian Asian dish redo with 5 ingredients and easily adaptable to any vegetables you have on hand.
Tuesday’s dinner is a no cook, 10 minute taco I love to make on warm days. But, it’s healthy and packed with good-for-you food.
Wednesday’s dinner is a multi-cooker dinner that’s simple to make in no time and made with equally easy ingredients, like ground beef! Serve over your favorite grain.
Thursday’s dinner is a simple shellfish meal with zesty and even spicy seasoning that makes it utterly delicious for midweek. It’s served over cauliflower rice, but you can easily substitute it for your favorite grain.
Friday’s dinner is a summer classic at my house. It’s ready in 15 minutes or less and is always a fun favorite during warm days. Serve with your favorite condiments!
The Treat this week is a quick and easy 3 ingredient take on classic peanut butter cookies.
