August 30 Minute Dinners Menu

Monday’s dinner is a quick and easy summer whole grain pasta featuring squash, like zucchini, and fresh summer herbs—a perfectly healthy meal in minutes. Serve with a side salad and whole-grain bread if desired.

Tuesday’s dinner is a 30-minute casserole that’s family-friendly, easy, and delicious. Serve with all the taco condiments you love, including a big salad!

Wednesday’s dinner is a skillet Mediterranean diet-friendly meal with chicken breasts or thighs and seasonal veggies. It’s delicious and simple, with bright summer flavors.

Thursday’s dinner is one of the easiest seafood dinners you can make. Inspired by fish en papilotte, this simpler version is ready in 20 minutes or less! Serve with couscous or rice and your favorite green salad. I’m serving a spinach salad.

Friday’s dinner is all about summer and grilling, which can be done indoors or out. It’s Greek grilled chicken skewers with tzatziki, tomatoes, and cucumbers, all wrapped in a whole-grain pita. And it’s Friday-perfect!

Treat: It’s zucchini season, and we’re celebrating with a muffin that’s a tiny bit decadent but oh-so-yummy! If you’re in the mood for peaches, I would suggest Easy Peach Icebox Cake!
