Icebox Cake Ingredients
You will find ingredient measurements in the printable recipe card below, but here is a quick list of what you need:
- Graham cracker sheets: I love to use my homemade graham crackers as they’re soft, cinnamon and delicious. But if you want to make this icebox cake very easy, store-bought is just fine! I do like the cinnamon graham crackers for that extra boost of flavor.
- Ice Cream: I’m using homemade peach ice cream, which is super easy to make in an ice cream maker. I love the hint of cinnamon and the flavors of fresh peaches. Again, store-bought ice will work great, too, in your flavor choice. Just be sure to soften it a bit.
- Whipped Topping: I’m using a combination of heavy whipping cream, sweetened with powdered sugar, and flavored with vanilla extract. To make it easier, you can also use a ready-made whipped topping, like Cook Whip.
- Garnish: Fresh peach slices
How to Make Peach Ice Box Cake
There are two ways to make this no-bake dessert. Both are easy, but if made entirely from scratch, there are a few extra steps. Below, I’ll give you a brief overview of how to make both from scratch and semi-homemade.
How to Make Icebox Cake with Ready-Made Ingredients
There are 3 layers of graham crackers and 2 layers of ice cream.
- Begin by setting the ice cream on the counter and letting it soften a bit. It needs to be soft enough to spread (or smoosh) into the corners of a 9-inch square baking dish. Line a 9 x 9-inch baking pan with parchment for easy removal.
- Add 6 graham crackers to the bottom of the pan and top with half of the softened ice cream.
- Repeat this layer one more time and top with a final layer of graham crackers.
- Wrap and freeze for 4 hours or until frozen. When ready to serve, top with whipped cream, graham cracker crumbles, and fresh peach slices.
How to Make Icebox Cake By Scratch
You can make the graham crackers ahead and store them at room temperature or freeze them until ready to make the icebox cake.
Make your favorite homemade ice cream. I’m using my peach ice cream recipe in an ice cream machine. Let it churn for 25 minutes, and then it’s ready to use in the icebox cake. Soft serve is perfect.
- Line a 9 x 9-inch baking pan with parchment for easy removal.
- Add 6 graham crackers to the bottom of the pan and top with a layer of softened ice cream.
- Repeat this layer one more time and add a final layer of graham crackers on top.
- Wrap and freeze for 4 hours or until frozen.
When ready to serve, top with whipped cream, graham cracker crumbles, and fresh peach slices.
Variations
There are almost endless variations of this simple icebox cake. It’s all in the ice cream! Choose your favorite flavor (homemade or store-bought), and use either plain graham crackers or, if the flavor profile works, cinnamon or chocolate. Easy Peach Icebox Cake Recipe
Equipment
Ingredients
- 19 graham cracker sheets homemade or store-bought, I prefer cinnamon grahams with peaches.
- 2 pints peach ice cream homemade or store-bought (or your favorite flavor)
- 1 cup heavy whipping cream or whipped topping
- 1/4 cup powdered sugar (omit if using ready-made)
- 1 teaspoon vanilla extract (omit if using ready-made)
- 1 peach sliced, for garnish
Instructions
- If making homemade graham crackers, make these ahead and store them either at room temperature or freeze them for longer storage.
- Make homemade cream and let it churn until it's at the soft-serve stage. If using store bought ice cream, let it soften so that its easier to spread into the corners of the pan.
- Line a 9-inch square baking pan with parchment for easy removal.
Icebox Cake
- Line the bottom of the pan with 6 graham cracker sheets (breaking into pieces as needed to cover). Top with half of the softened ice cream. Repeat the layer one more time, and top with a final layer of graham crackers. There should be 3 layers of graham crackers and 2 layers of ice cream.
- Cover and freeze for 4 hours or until frozen.
Serving the Icebox Cake
- Remove the cake from the freezer. Use the parchment paper to lift the cake out of the pan and let sit for 5 minutes.
- Make the whipped topping: If making from scratch, combine the whipping cream, powdered sugar and vanilla and beat until soft peaks form. If use whipped toppening, skip this step.
- Top the icebox cake with whipping cream, peach slices, and a crumbled graham cracker sheet.

- Prep Time: The recipe prep time is calculated for using ready-made ingredients (graham crackers, ice cream, and whipped topping).
- Ice Cream: Use your favorite flavor of ice cream. I’m using peach, but any flavor works equally well. Just be sure to let it soften a bit.
- Graham Crackers: I’m using homemade graham crackers with a hint of cinnamon. While I love the combination of peach and cinnamon, use your favorite store-bought graham, depending on the flavor of your ice cream (plain, cinnamon, or even chocolate)!
- Garnishing: Let the ice cream flavor be your guide. If using a berry ice cream, use berries on top of the whipped cream, etc.
