What is the Mediterranean Diet?
The Mediterranean diet is a lifestyle that isn’t as much about following rules as it is flexible guidance about how to eat and live in a healthy, nourishing, and positive way. While it isn’t as restrictive as some “diet” plans, it does encourage you to concentrate on a variety of whole grains, beans, fruits, vegetables, lean proteins, and healthy fats.

August Mediterranean Diet Dinners Menu
Monday’s dinner is an easy, meatless, warm salad with hints of the fall season to come. Roasted veggies are packed with flavor, served in a bowl, and topped with all your favorite Mediterranean toppings like cucumbers, feta, and avocado.
Tuesday’s dinner is a summer favorite made delicious and leaner using ground turkey. It’s a grilling night, but you can grill just as easily in the backyard or stovetop! Add all your favorite condiments and a large salad! And if you’re in the mood for healthier fries, maybe add Baked Sweet Potato Fries with Avocado Greek Yogurt Dip!
Wednesday’s dinner is one of my favorite chicken skillet dinners, combining some of my favorite flavors. Cooked in one pan with only a handful of ingredients, it’s ready in about 30 minutes!
Thursday’s dinner is a delicious and pretty 20-minute seafood meal that’s all about summer flavors and late summer produce. It’s a simple Mediterranean meal packed with flavor that’s almost effortless. Serve with whole-grain pasta.
Friday’s dinner returns to the grill with a delicious Greek Salad perfect for enjoying indoors or out! It’s a Happy Friday in the summer kind of meal!
Treat: Stretching summer to its fullest with a simple Meditteranean-inspired treat that, I admit, is only loosely inspired, but it fits as its main ingredient is ricotta!

Wednesday: One Skillet Mediterranean Lemon Chicken and Orzo
Mediterranean Lemon Chicken and Orzo is a quick and easy chicken and broccoli recipe made in one skillet. It is filled with bright, citrusy flavor and is a wholesome meal for busy weeknights!
Thursday: Scallops and Cherry Tomatoes with Caper-Butter Sauce
These pan-seared scallops come together in just 20 minutes for a delicious, easy dinner. You'll want some whole-wheat angel hair pasta or polenta to sop up all the rich, briny sauce. After removing the scallops, combine cherry tomatoes and capers in the skillet for a flavorful sauce. Whisk in a little butter to give it some body and richness. To serve, simply spoon the sauce over the scallops and some whole wheat pasta.
Friday: Greek Grilled Chicken Salad
This grilled chicken salad combines marinated chicken, fresh veggies, and bold Greek flavors all in one tasty and easy dinner.
