It’s the best week of the year—the afterglow of a beautiful holiday season. So we’re making dinners simple and easy but also delicious, cozy, and easy to swap in leftovers with soups, casseroles, and more.

Christmas Week Dinners Menu

Monday’s dinner is Christmas Day. We’re serving Prime Rib this year, but there are so many delicious options. If you’re looking for ideas for your feast, from sides to the main event and even desserts, you may want to take a look at 60 Festive Christmas Dinner Recipes. Tuesday’s dinner is one of my favorite ways to use leftovers. While the recipe uses leftover chicken, it’s equally delicious with turkey, beef, pork, or any other meat you have on hand. It’s also delicious with simple cubes of butternut squash and spinach. Make it your own and use up what you have on hand. It’s delicious and super easy!

Wednesday’s dinner is a hearty soup that’s a wonderful cozy meal using a leftover ham bone. If you didn’t make ham during the holidays, you can easily swap in deli ham or cubed ham steak. Add a salad to round out the meal.

Thursday’s dinner is on the lighter side, but incredibly delicious and fresh. It’s elegant and simple!

Friday’s dinner is a nod toward our upcoming healthy habits goal in January, but it doesn’t skimp on flavor or coziness. It’s a vegetarian dish my family loves. For a treat, make a batch of cornbread and serve a green salad.

The Treat is a nice change from the cakes and cookies of Christmas. A bit healthier, but also elegant enough to serve during New Year’s!
