Every week, I love to theme our weekly dinner meal plan. It makes preparing nightly meals fun and interesting. With the holiday season in full swing and the busyness of schedules, gifting, entertaining, and baking this week, I wanted to keep dinners simple, easy, and comforting.
So, this week’s meal plan is all about comfort dinners with familiar flavors. These are recipes that readers say are some of their favorites and that they love to make in their regular meal rotation.

Family Favorite December Dinners Meal Plan (December 4)
Monday’s dinner is a classic Italian soup filled with good-for-you, healthy ingredients that will keep you satisfied. Add a winter greens salad and whole grain bread to round out the meal.
Tuesday’s dinner is a multi-cooker quick and easy dinner with healthy quinoa and enchilada flavors we crave. Add all the condiments like tomatoes, avocados, and Greek yogurt (or sour cream). And if you have time, a batch of cornbread would be delicious too!
Wednesday’s dinner is a 30 minute pasta dish filled with Greek Mediterranean flavors. While this is a vegetarian recipe, it’s easy to add additional protein if you wish. Quick-cooking shrimp or chicken (or even your favorite ground meat) would also be delicious in this meal.
Thursday’s dinner is a favorite fish taco meal with bright flavors and delicious ingredients. You can add a cooked grain if you like or make a quick batch of salsa!
Friday’s dinner is ALL about comfort food in the easiest way possible… the crockpot. Set it and let it do its thing while you’re busy with December activities. Delicious, simple, and perfect Friday night food!

Instant Pot Chicken Enchilada Quinoa Casserole is an easy-to-make, one-pot bowl meal, much like a burrito bowl full of the Mexican enchilada flavors we love.
Wednesday: Greek Pasta Toss
This bright pasta dish is filled with favorite Greek ingredients like olives, feta cheese and sun-dried tomatoes. While this is a vegetarian dish, try adding quick cooking shrimp or chicken to round out the meal. Add a green salad too!
Thursday: Seared Halibut Fish Tacos with Cilantro Slaw

Treat: A Classic Scottish Shortbread
Mildly sweet, melt-in-your-mouth flaky, easy to make, improves as it ages -- a welcome accompaniment to any cookie tray, but for me, it's absolutely perfect with a cup of tea.
