The festive season is here. There are so many things to be busy with this time of the year. Weeknight dinners can, at times, be the last on our list.
Hopefully, this week’s dinners will take that off your to-do list. I know it is on mine!
With two weeks left in 2023, let’s make the most of this beautiful season!

30 Minute December Skillet Dinners Menu
Monday’s dinner is a flavor-packed vegetarian skillet meal with quinoa, beans and sweet potatoes. It’s hearty and delicious. Add a crisp side salad and chop avocadoes to garnish this simple 30-minute dinner!
Tuesday’s dinner is a one-pot, easy skillet dinner with seared and juicy chicken cutlets seasoned with Italian spices and then simmered in a dairy-free velvety cream sauce. And for incredible flavor, it’s topped with crispy prosciutto. Add a side salad to round out the meal.
Wednesday’s dinner is a colorful and hearty skillet dinner that’s made with lean ground beef, chunky potatoes and veggies like kale, tomatoes and peppers. Feel free to swap the ground beef for your favorite ground meat.
Thursday’s dinner is a Mediterranean inspired seafood dish that comes together quickly and deliciously. I’m adding a 10 Minute Greek Salad to serve for visiting guests.
Friday’s dinner is a surprising but delicious take on pot pie. It’s healthy, delicious, and made in a skillet. Rather perfect for the 22nd of December!
The Treat is a quick and easy festive snack/sweet/dessert recipe kids (of all ages– like us) absolutely love!
