Healthy 20 Minute Dinners
Last week, we kept dinners to 15 minutes because of Thanksgiving.
Those quick and easy dinners were so wonderful, we’re keeping it going with these healthy 20-minute dinners. They’re healthy, flavorful dinners, with a focus on healthy grains.
I’m so in love with sweet potatoes right now. Monday’s dinner is a baked sweet potato, loaded with Mexican flavors. Consider baking ahead the sweet potatoes, or microwaving them on Monday to keep it quick and easy.
Tuesday is a Southwestern Chicken Quinoa Bake. It’s one of our favorites at home. Like Monday’s dinner, I will either make ahead the quinoa, or make a quick 1-Minute Instant Pot Quinoa.
On Wednesday, we’re making a quick, 20-minute healthy chili. I’m serving it with some kind of greens and maybe, corn muffins. I’m looking forward to that cozy comfort food dinner!
Thursday will be a treat with a quick, 15 minute quick, salmon bisque. Which I’ll also add some healthy greens on the side.
For Friday, we’re making takeout at home with a quick but healthy fried rice. I’m even adding some fortune cookies to make it fun!
