December One Pot Dinners Menu

Monday’s dinner is a simple one-pot vegetarian soup with Moroccan flavors perfectly suited to December. Add a big salad with hearty greens and whole-grain pita or bread.

Tuesday’s dinner is always a favorite at our house– a simple skillet Mexican meal where the condiments make all the difference. It’s a great opportunity to pack in the veggies with avocados (or guacamole), chopped tomatoes, onions, greens and herbs. I’m serving with street taco-size whole grain tortillas.

Wednesday’s dinner just makes you feel good about December! It’s comforting, creamy, and super easy when using rotisserie chicken. If you don’t use the whole chicken, shred what is left and freeze for quick meals this winter. Think stir-fries, soups, salads, and more.

Thursday’s dinner is a roasted sheet pan seafood meal with an easy, flavorful Argentine sauce. Serve with mashed potatoes and roasted broccoli.

Friday’s dinner is a reader’s favorite one-pot pasta dinner. The best part of this simple meal is how easy it is to customize not only to your flavor preferences, but honestly, what’s left in your refrigerator from the week! Choose your favorite ground meat and add any vegetables that need to be used before the weekend.

The Treat is one of the easiest holiday cookies you can make. Make it ahead and slice when you’re ready to bake!
