15-Minute Chicken Teriyaki with Broccoli is an easy, quick, skillet dinner, perfect for weeknight meals. And what I love most? It’s healthy with ingredients I almost always have on hand.

Simple, healthy meals are a mainstay in my kitchen… and I’m sure they are in yours. Some evenings are so crazy busy that without these easy dinner ideas… I would be reaching for the take-out menu.

Using a good quality teriyaki sauce is key. I have a couple of favorites and I try to always have it on hand. Not only is it great for marinading and basting meat, it’s also great for a quick vegetable fried rice. Anytime I have leftover rice, I add whatever veggies I have on hand, or even some frozen peas and carrots, scramble an egg, add a little teriyaki sauce. It’s so good!
