With the calendar turning toward June, we’re starting the season a bit early with these weeknight healthy summer dinners.
Happy Memorial Day weekend!
I hope you have plans to celebrate both the holiday… and the unofficial beginning of summer.
Traditionally, Monday would be an all-out feast, picnicking with the family. This year, we’re keeping it simple without neglecting the foods we love.
The Instant Pot BBQ Ribs, scheduled for Monday, is an easy way to serve quintessential summer food. Converting a several hour grilling process, into minutes.
The rest of the week is filled with healthy weeknight dinners that capture early summer flavors. From grilled snapper to skillet pizza… and a no-churn chocolate ice cream.
We couldn’t use the word “summer” without also including ice cream, right?

Memorial Day: Easy BBQ Instant Pot Ribs
For many, the unofficial start of summer begins today. We're celebrating with an easy Instant Pot BBQ ribs recipes. So simple, quick, and fall-off-the-bone delicious. I'm pairing it with a simple green salad, grilled veggies... and either or maybe both--- chocolate cake and sometime in the day, Strawberry Shortcake! Tuesday: So Simple Stir Fry
The perfect dinner to use any leftovers from Memorial Day. If you have BBQ chicken, throw it in, pork or steak, throw it in. Add the vegetables you have and serve over steamed rice. I like to make up a batch of Simple Stir Fry Sauce to keep in the refrigerator for quick and easy dinners.
Garlic-Chipotle Chicken Tacos
"To save time, this recipe utilizes chicken cutlets that cook up in a flash on the grill." Serve with greens and sliced avocado. Or make your own avocado hummus - recipe here.
Thursday: Grilled Red Snapper
"This simple grilled snapper has clean flavors and a nice char flavor from the grill. It's well seasoned but not overly spicy. Serve along with grilled veggies or a fresh green salad to make it a meal."
Friday: Broccoli & Sausage Skillet Pizza
Because I'm thinking about all things broccoli these days, this homemade skillet pizza seems perfect for Friday. I'm adding fresh greens and calling it dinner!
Treat: No-Churn Chocolate Ice Cream
After a week of teasing summer with weeknight dinners, I couldn't think of a better treat than Chocolate Ice Cream. No ice cream machine required!
