Healthy 20 Minute Dinners Menu

Monday’s dinner is a reader favorite chicken dinner, made in a skillet, in about 20 minutes. Serve over pasta or zucchini noodles for low carb. I’m cooking a couple of more chicken cutlets to reserve for tomorrow’s dinner. This recipe makes meal prepping the chicken really simple.

Tuesday’s dinner is a quick and easy skillet fajita recipe that’s ready in minutes. The recipe uses rotisserie chicken, which I’m swapping for the meal prep chicken I cooked during Monday’s dinner. Add all your favorite condiments!

Wednesday’s dinner is a takeout favorite made simple with ground beef. Packed with vegetables and matchstick carrots, it’s another quick and easy family favorite! Serve over whole grain rice noodles.

Thursday’s dinner makes one truly believe that spring is around the corner. Roasted salmon is served with a tangy yogurt sauce that makes all the difference! Serve with healthy greens or cooked vegetables on the side.

Friday’s dinner is all about Mexican food favorites with a healthy twist. This skillet is made with ground turkey, beans, tomatoes and peppers. It’s a quick and easy Friday meal!
