Healthy 30 Minute Dinners Menu

Monday’s dinner is a spring meal inspired by St. Patrick’s Day! It’s a recipe I revised years ago from an inn in Ireland. Known for their delicious salmon, it’s one of my favorite seafood dishes, especially in the spring. Serve with peas and steamed potatoes for a tradition dish. And maybe with an easy Irish soda bread on the side!

Tuesday’s dinner shifts gear from Irish flavors to an explosion of Mexican flavors with a simple one-skillet fiesta meal that’s healthy, easy, and delicious! Serve with salad greens on the side and all your favorite taco condiments.

Wednesday’s dinner is a simple bowl of healthy, Asian-inspired flavors served over your favorite grain, whether that be rice, brown rice, quinoa, or farro. It’s spring, so serve with a fresh salad.

Thursday’s dinner features a simple yet delicious lemon chicken dish made in a skillet and ready in 30 minutes or less. For a light dinner, serve with roasted vegetables like asparagus and greens. For a hardier meal, add a starch, like mashed potatoes or parsnips.

Friday’s dinner is a seafood dish I love. The recipe was developed from a sweet story about two neighbors who do not share a common language—except when it comes to food.

The Treat is all about spring, carrots, and natural sweeteners.
