Tuesday is equally easy with a gingery chicken stir-fry dinner that will remind you of a takeout favorite.
On Wednesday, we’re lightening up a comfort food favorite of Smothered Pork Chops, swapping out a few ingredients to make it healthy. Thursday is an easy Salmon dinner served over sauteed kale.
We’re celebrating Friday with a quick Instant Pot Ground Turkey chili recipe that seems perfect for November.
The treat is a favorite pumpkin bread recipe. Consider making a double batch and freezing one for a make-ahead holiday treat.

This Pumpkin Curry Soup is incredibly delicious, rich, and creamy. Simple to make in 30 minutes, it's a fall favorite or perfect Thanksgiving side. For a weeknight dinner -- I will skip the roasted pumpkin, but if you have extra time, it's simpler than it looks!
Tuesday: Gingery Chicken and Spinach Stir-Fry
"If you're experiencing a take-out craving, whip up this easy stir fry instead. A few tablespoons of miso — a fermented paste — adds both flavor and gut-boosting probiotics." Serve with steamed rice of your choice.
Wednesday: Smothered Pork Chops With Broccoli and Mushrooms
A quick and easy comfort food classic. This recipes swaps notoriously high-fat sauce for a lighter version made with white wine, crème fraîche, and a bit of Dijon. Feel free to swap the white wine for chicken broth and the crème fraîche for light sour cream.
