This week's healthy July meal plan is filled with one-pot and skillet dinners, seasonal produce, bright herbs, and weeknight-friendly meals that don't ask too much of a warm summer evening. Think tomato basil pasta, easy chicken tacos, peaches and pork chops, salmon with greens, and a Mediterranean chicken skillet to finish the week.

Healthy July One Pot Dinners Menu & Serving Ideas

Here's what's on the menu this week:

  • Monday: One Pot Tomato Basil Pasta: A fresh and easy pasta dinner with tomatoes, basil, and simple pantry ingredients. Serve it with a crisp green salad or sliced cucumbers for a light summer meal.
  • Tuesday: Mexican Chicken Tacos: Shredded Mexican chicken makes taco night simple and flexible. Serve with warm tortillas, shredded lettuce, avocado, salsa, and a quick side of black beans or corn salad.

Meal Prep Tips

  • To make the week easier, cook or prep the shredded Mexican chicken ahead and refrigerate it for Tuesday's tacos. It also makes excellent leftovers for salads, rice bowls, or quick lunches.
  • Wash and dry salad greens early in the week, and prep simple taco toppings like shredded lettuce, chopped tomatoes, and sliced green onions.
  • For Wednesday's pork chops, make sure the peaches are ripe but still firm enough to hold their shape in the skillet. You can also season the pork chops ahead and refrigerate until ready to cook.
  • If you're planning the salmon for Thursday, thaw it overnight in the refrigerator and pat it dry before cooking for the best sear.
  • And don't forget the popsicles. Make them a day or two ahead so they're frozen and ready whenever the week needs something cool and sweet.
