I know what you may be thinking. Fettuccini Alfredo, healthy? It’s like my splurge meal when visiting my favorite Italian restaurant. But I promise, this recipe is lightened up yet retains all the flavors you love!
On the heels of Mother’s Day weekend, these weeknight meals are healthy and quick—sometimes as fast as 15 minutes! Seriously.
Healthy May 30 Minute Dinners Menu
Monday’s dinner begins the week deliciously with that Fettucini Alfredo I mentioned. Suddenly, Monday doesn’t seem so… Monday-ish! You’ll love this lightened-up meal that is flavorful, healthy, and, yes, perfect for Monday. Add a large green salad and for me, I can’t have it without a side of broccoli. If you want to add protein, chicken is a great option.
Tuesday’s dinner is a stir-fry dish packed with flavor, protein, and healthy veggies. Serve with brown rice.
Wednesday’s dinner is a 15-minute salad that’s easy to mix and match with your favorite in-season fruit or berries. To round out the meal, add whole-grain bread.
Thursday’s dinner is another 15-minute meal! This salmon dish is cooked in one skillet with greens and is delicious with roasted potatoes, mashed potatoes, or with your favorite grain.
Friday’s dinner is a one-pan sheet pan meal that is baked for 10 minutes. It doesn’t get quicker or more delicious than this! Serve with your favorite tortillas or wraps and all your favorite condiments.

This lightened up version of a restaurant favorite substitutes some ingredients for healthier choices, but keeps the creamy deliciousness we all love. Add a big, green salad, and for me, I always have to have a side of broccoli too. Add chicken if you want to add additional protein.
Spicy Orange Beef & Broccoli Stir-Fry

Wednesday: 15 Minute Chicken Salad
With warmer weather on the way, it's salad season. Dinner salad season! This easy, filling, and mouth-watering pan-seared chicken salad with a hot honey vinaigrette is made to order. And... can be whipped up in just 15 minutes flat. Substitute your favorite in season fruit or berries and serve with whole grain bread of choice.
Thursday: 15 Minute Pan Seared Salmon Recipe with Greens
Pan Seared Salmon with Greens is a quick and easy flakey and tender salmon recipe that’s simmered in a honey ginger soy sauce. It’s ready in about 15 minutes using one skillet and is incredibly delicious! Perfect for speedy and healthy weeknight dinners. Serve with roasted potatoes or with your favorite grain.
Friday: Sheet Pan Shrimp Fajitas
