What to Cook: Pantry Dinners April 19
These healthy Pantry Dinners for April 19 are easy, quick and colorful. The pantry ingredients are easy to swap for items you may already have on hand.
Well into our pantry cooking amidst staying and working from home, these dinners are easy, healthy, and family-friendly too.
From slow cooker tomato soup with grilled cheese to burritos, meatloaf, tuna salad, and deep-dish pizza.
And all are pantry friendly!
Speaking of pizza… in our house, and maybe in yours too, pizza is serious business. Everyone has their favorites and they’re very loyal to them. I like the idea of a deep-dish pizza because it seems to be more filling for the men in my life. But here are some additional ideas on making a Friday pizza.

I find myself baking more than usual these days. One such project was to make ahead several batches of pizza dough for the freezer. It’s easy and convenient for dinners and even lunches. After an overnight thaw in the refrigerator, the pizza dough is ready to become something delicious. Without a trip to the market.
The Treat
Are you a fan of mug desserts? I’m not sure if it’s a sign of the times… or just that they’re super tasty, but I find myself making these little guys often.
This Chocolate Chip Banana Mug Cake is one of my favorites!

Tuesday: Quick Instant Pot Chicken Burrito Bowls
This Instant Pot Burrito Bowl is a 20-minute, one-pot dinner that is incredibly delicious. Mexican spices blend to cook tender, pull apart chicken with black beans, corn, and rice... in one irresistible bowl. And yes -- frozen chicken works great too!
Wednesday: Muffin Tin Mini Turkey Meatloaves
One of my favorite ways to make turkey meatloaf, this muffin tin offers individual portions, shorter baking time -- and they are super tasty!
Thursday: Italian Orzo Tuna Salad
Change up for the pasta you have in the pantry. While this salad recipe uses canned tuna, orzo, sun-dried tomatoes, red onion, toasted pine nuts, feta cheese, and fresh basil, switch it up with ingredients you have on hand. "It calls for a few simple cans of tuna, whose flavor is balanced out nicely by all of the other ingredients and adds a nice extra dose of protein to this dish. It’s easy to make ahead, and equally delicious served hot or cold. And perhaps most importantly to me, it includes zero mayo."
Friday: Vegetable Lovers' Deep-Dish Pizza
