With picnic season upon us, and the hot weather season making itself known, we’re keeping the kitchen cooler with quick-cooking meals perfect for late July.
This week’s menu ideas feature late summer produce, like corn and zucchini. However, if they’re not your favorites, these recipes make it easy to substitute with the veggies you prefer.

Wednesday’s dinner is a dish I serve all year, but I especially love it in summer with fresh tomatoes, zucchini, and corn. Make it your own by adding your favorite veggies and pasta, and serve with a summer salad, like Grilled Corn Salad with Feta!
Thursday’s dinner is a fun meal. It’s bringing summer to the table with a 15-minute recipe, perfect for picky eaters and those who like dinner their own way. It’s a mix-and-match, made for summer dinner.
Friday’s dinner is about BBQ chicken, red cabbage, and tacos! Absolutely delicious.
Treat: Have you had a picnic yet this season? For me… It’s happening this week. Even if it’s only a dessert picnic.
