May Healthy 30 Minute Dinners Menu

Monday’s dinner is a little taste of curry heaven featuring a root vegetable I can’t seem to stop making recipes with! From an upcoming sheet pan dinner (posting next week) to my always-favorite sweet potato breakfast casserole, it fits that I can’t wait to make this 20-minute dinner on Monday. Serve with rice or your favorite grain, and add extra greens on the side!

Tuesday’s dinner is a stir-fry dish packed with flavor, protein, and healthy veggies. Serve with brown rice, farro, quinoa, or your favorite grain.

Wednesday’s dinner is a quick, skillet seafood meal I love in late spring. It’s ready in about 15 minutes with a sauce you won’t want to miss. If desired, serve with roasted vegetables, greens, and roasted potatoes or couscous.

Thursday’s dinner is a 15-minute salad that’s easy to mix and match with your favorite in-season fruit or berries. To round out the meal, add whole-grain bread.

Friday’s dinner is a one-pan sheet-pan meal baked for 10 minutes. It doesn’t get quicker or more delicious than this! Serve with your favorite tortillas or wraps and all your favorite condiments.

The Treat: A European dessert that’s perfect for strawberry season — or graduation celebrations!
