While in-season fruits and vegetables will vary depending on where you live, these springtime offerings are a great place to start!

In Season Vegetables

  • Rhubarb
  • Asparagus
  • Artichokes
  • Beets
  • Carrots (late spring)
  • Fava Beans
  • Greens like spinach, arugula, watercress, collards, and more
  • Leeks, spring onions, and scallions
  • Peas (including snap peas, snow peas, and garden peas)
  • Radishes
  • Ramps

In Season Fruits

  • Apricots
  • Blueberries (late season)

May Mediterranean Diet Dinners Menu

Monday’s dinner celebrates Cinco de Mayo (which, admittedly, is a mostly American celebration). However, Mexican recipes are always a favorite and can also be Mediterranean Diet-friendly. We’re making a twist on the classic with Mediterranean-style tacos served with pita bread. If you can, use whole-grain pitas to keep it healthy! If you want an extra special treat that perfectly aligns with this lifestyle way of eating, try this simple Mexican Shrimp Cocktail recipe.

Tuesday’s dinner is a quick meal bursting with Mediterranean flavors and ingredients. And perfect for the warming days of spring. Think salmon and couscous.

Wednesday’s dinner is a quick and delicious skillet meal featuring eggs as the protein and comfort food ingredients we love. Serve with warm whole-grain bread or toast to round out the meal. And a salad would be a great addition!

Thursday’s dinner is another quick seafood dish made with pasta. Look for whole-grain pasta for this meal and add a large salad filled with in-season fruits, greens, and vegetables. I can’t seem to add enough radishes to meals these days so my salad will be filled with these gems!

Friday’s dinner is fun food, which might just mean the grill. Depending on the weather, it may be outside or in a large skillet indoors. However, I have high hopes for the weather and the start of Mother’s Day weekend. Serve with all your favorite healthy condiments, such as 5-minute Greek Tzatziki Sauce or 2-minute Greek Dill Yogurt Sauce, along with whole-grain pitas.

The Treat: We’re whirling up a naturally sweetened 2-ingredient frozen dessert and looking toward warm days to come!
