Early Spring Healthy Dinners Menu

Monday’s dinner is a cozy, delicious, easy soup with vibrant lemony flavors. For added protein, add cooked chicken (like rotisserie chicken) near the end of cooking if you want. Do add a large spring salad with fresh greens (like arugula and spinach) and maybe whole grain bread to round out the meal.

Tuesday’s dinner is a Mediterranean inspired Greek chicken dish you can make in the Instant Pot or on the stovetop. Add whole grain pitas for a fun and delicious addition to the meal. I like to keep a package in the freezer for quick additions to our Mediterranean dishes.

Wednesday’s dinner will make you believe it’s a date night, but it’s actually a quick and healthy dish you can make any night of the week. Add whole-grain noodles to make it even healthier. Serve with a salad.

Thursday’s dinner is high protein and perfect for meal prep. The ingredients are simple and nourishing, the flavors are delicious. And if you have leftovers, it makes great lunches! Serve with your favorite grain.

Friday’s dinner is bursting with flavor. And if you’re watching March Madness Sweet Sixteen basketball, it makes for delicious game day food! Serve with sweet potato fries (homemade or store-bought) and a salad!
