February One Pot Mediterranean Diet Dinners Menu
Monday’s dinner will warm your toes deliciously. This healthy chickpea soup is filled with greens (spinach or your favorite greens) and curry flavors. If preferred, add protein, like chicken. Serve with a salad.
Tuesday’s dinner is a pantry-inspired Mediterranean-inspired meal with canned tuna. It takes 15 minutes to complete. To round out dinner, add whole-grain bread or pitas.
Wednesday’s dinner will hint at the spring season with a quick and simple Mediterranean lemon chicken dish made in a one-skillet. Add roasted vegetables or pan-seared greens on the side.
Thursday’s dinner is another quick skillet meal with salmon and greens. I’m adding chopped bok choy and brown rice on the side.
Friday’s dinner is a one-pot pasta dinner. I’m swapping ground turkey for beef and making the dish with whole-grain pasta. This is always a favorite, plus it’s simple and easy to make your own with whatever vegetables you have in the refrigerator!
The Treat also hints at spring (at least to me), plus it’s naturally sweetened and makes delicious breakfast or snacks.
