November Mediterranean Diet Dinners Menu

Monday’s dinner is a vegetarian version of a popular Indian dish that swaps cauliflower and chickpeas for chicken. The cauliflower soaks up the intense curry flavors of the sauce. Serve over rice (or grain) for a healthy dinner in just 20 minutes.

Tuesday’s dinner is a Mediterranean classic breakfast for dinner featuring vegetables and healthy protein. It’s a one-skillet dinner that’s filling and delicious!

Wednesday’s dinner is also a one-skillet meal featuring seared chicken thighs, pearl couscous (my absolute favorite), and healthy veggies. It’s simple and delicious! Add a green salad to round out the meal.

Thursday’s dinner is a simple seafood dish with Mediterranean ingredients that make the most delicious sauce. While the recipe calls for Sea Bass, you can substitute any firm white fish like halibut, cod, or striped bass. Depending on who is home for dinner, I’m adding a salad and possibly a healthy grain (like quinoa or farro)!

Friday’s dinner is a bowl of November comfort. It’s hearty and easy, and Friday is perfect with Southwest-inspired flavors. The veggies and beans make it Mediterranean Diet friendly. Add whole-grain bread (or pitas) to round the meal out.

Treat: It’s Mediterranean, quick, healthy… and perfect for November!
