November Skillet Dinners: This week’s dinners are one-pot, easy and healthy weeknight meals packed with flavor and best of all — easy dinner cleanup.
With Thanksgiving on the horizon and many of us cooking ahead, this week’s dinners need to be simple yet hearty and delicious.
Here’s what we’ve planned for the dinner menu.
November Skillet Dinners
I’ve been craving spaghetti squash lately. Which, incidentally, is nutrient-dense; a good source of fiber, vitamin C, manganese, and vitamin B6. Maybe that’s why I’m craving it!
Monday’s dinner is a quick and easy skillet spaghetti squash casserole with Kielbasa. I love adding sausage to simple dishes. An easy way to bring added flavor to a dish. Serve with greens on the side.
On Tuesday, we’re making an easy Asian-inspired noodle dish with ground pork and swiss chard. Always a favorite at my house. I’m adding a side salad, even though the skillet noodle dish also has greens.
Wednesday’s dinner is an Italian-inspired skillet dinner featuring quinoa, chicken, and Italian flavors. If quinoa isn’t your favorite grain, you can easily substitute it. Cook according to package instructions and add them in place of the quinoa.
For Thursday, we’re cooking an equally simple skillet pasta with canned salmon and frozen peas. This is a great recipe for using pantry stores. I’m also adding a side of greens with this pasta.
Finally, on Friday, it’s about easy party food. The skillet Mexican Lasagne is simple and fun! Add your favorite taco and Mexican condiments — and maybe some chocolate too.

Monday: Kielbasa-&-Swiss Spaghetti Squash Casserole
Zesty sauerkraut, Swiss cheese and rye bread add Reuben-esque flavor to this surprisingly addictive spaghetti squash skillet recipe. If you can't find seeded rye bread, add 1/2 to 1 teaspoon caraway seeds to the mixture in Step 2. Serve with a green salad tossed with red-wine vinaigrette.
Tuesday: Ginger Pork Noodles with Bok Choy
