This October 30 Minute Mediterranean Diet Dinners meal plan features healthy weeknight dinners inspired by the season. From one pot or one skillet meals to plant based stews, lentils, seafood, and chicken. These speedy good-for-you dinners are ready in 30 minutes or less!

30 Minute Dinners

I will often ask a question in our Friday morning email chat (I’d love to have you join us!). Last week’s question asked what was important to you when considering weeknight dinners. There were six options. The top two?

  1. Quick and Easy 30 Minute Dinners
  2. Mediterranean Diet friendly meals

I love it when we think alike — because both of those are also important to me as I prepare weeknight meals for my family. So this week’s menu focuses on quick and healthy meals that follow a Mediterranean Diet focus.

Mediterranean Diet Overview

The Cleveland Clinic posted this graphic that I’ve actually printed and posted on my refrigerator at home to remind the family on healthy food choices (for them– that would be snacking).

October 30 Minute Mediterranean Diet Dinners Menu

Monday’s dinner is a hearty, plant based stew with protein, greens, and cozy feels. It’s filling, delicious, and quick to make with canned beans. The recipe calls for swiss chard but you can substitute your favorite greens if you wish. I will add a whole grain or sourdough loaf to round out the meal.

Tuesday’s dinner is a pork skillet dish with October perfect veggies like butternut squash, kale, and apples. It’s simple to make and ready in 30 minutes. It’s a one pot meal with everything you need in the skillet! If you want, you could also add roasted potatoes.

Wednesday’s dinner is a plant-based, Mediterranean-diet, hearty one-pot lentil stew. It’s the season for one-pot meals and hearty legumes, and this stew is filling and delicious for chilly October evenings.

Thursday’s dinner is a seafood skillet dish with lemon-lime flavors and sauteed veggies like mushrooms, peppers, and greens. You can substitute whatever vegetables you have on hand or prefer and serve with a whole grain, like brown rice.

Friday’s dinner is a simple skillet Mediterranean dish that’s ready in under 30 minutes. Perfect for often busy Friday’s, but it’s healthy and filling too!

Treat: Okay– the treat is not healthy, and it’s not Mediterranean. But it’s so good, it’s a splurge, but it’s October and I’m craving it.
