The trees outside my kitchen window say fall has arrived. Oktoberfest gatherings are enticing this weekend, and the fall schedule has us hopping.
Let’s keep dinners simple, easy, and always utterly delicious this week! Giving us time for all the fun fall things we have planned. Pumpkins anyone? My family says it’s too early, I’m shaking my head and saying… “never!“
Let’s take a look at this week’s menu!
Fall One Pot Dinners Menu
Monday’s dinner is a healthy, one pot, meatless chili that just says fall. Serve with skillet cornbread if you like, and a big harvest salad! And hopefully, there will be leftovers for this week’s lunches.
Tuesday’s dinner is a simple skillet dinner with flavorful but quick-to-make pork chops served with sliced peaches and a balsamic glaze that makes it all come together. Don’t forget the greens!
Wednesday’s dinner is a takeout classic that’s had a healthy revamp. Serve over your favorite grain and a big salad. A fortune cookie might be fun too.
Thursday’s dinner is an easy seafood sheet pan meal that might bring Mexican corn flavors to mind. Simple to make with a fall favorite– sweet potatoes!
Friday’s dinner will remind you of Oktoberfest. A simple meal, made in one pot, with the German flavors we love.
The Treat is a healthier muffin recipe I’m loving this fall. Perfect for breakfast or snacks.

Tuesday: Skillet Pork Chops and Peaches with Balsamic Honey Sauce
